On the last day of the Disney SM Moms Conference we attended a Magic of Healthy Living Finale Celebration and Dinner in the Epcot World Showplace. Prior to dinner there was an interview opportunity to speak with Disney Channel celebrities, Disney chefs and executive spokespeople about the Magic of Healthy Living campaign and how to raise healthy, happy, exercise active kids. Dinner was a healthy one and the menu consisted of… Heirloom Tomato Water with Basil Essence and White Balsamic Fregola, Lentils, Quinoa and Burgundy Amaranth Watermelon Radish, Rainbow Carrot, and Quick Pickled Cucumber Summer Roll with Ponzu Sauce Pan Seared Poulet Rouge Breast with Heirloom Beans paired with Slow Poached US Wild Caught Striped Bass with Preserved Lemon and “Epcot The Land” Harvested Greens Mickey Mouse Polenta with Toasted Flaxseed House made Multigrain Baguette with Edamame Hummus After Dinner we attended the IllumiNations Reflections of Earth Dessert party in the Worldview Plaza. The desserts were along the same lines of the healthy trend but you didn’t know it because they were delicious! They had various lemonades and antioxidant juices to drink and desserts like Fresh berries with Nectar Pipette Antioxidant Jellies Yogurt Panna Cotta with Antioxidant Fruits Flourless Chocolate Cake with Ganache Mini Carrot-Zucchini Cupcakes Lite-Cheesecake Pushups Strawberry Shortcake In closing I will say that this whole conference was an amazing experience. Not only did I enjoy everything we participated in but I got to meet new people and make new friends. It was a memorable event I will always remember and hope to do again!
