
This was one of Walt Disney’s favorite meals and thankfully some awesome chefs at the Disneyland Resort created it. I love how comforting it is to have a nice, warm bowl of chili no matter what the weather is like outside. My husband is the expert in the chili department so it was a lot of fun collaborating with him on this recipe. Enjoy!
Here we go!
Walt’s Chili and Beans
Ingredients
2 lbs lean ground beef
2 lbs pinto bean, dry
2 medium sized onions, sliced
2 garlic cloves, diced
1 cup chopped celery
1 can (28 oz) chopped tomatoes
1/4 cup vegetable oil
1 tsp chili powder
1 tsp paprika
1 tsp dried thyme
Salt and pepper, to taste
Directions
1. Wash and soak the pinto beans
overnight in cold water.
2. Drain the beans and put into a saucepan. Add fresh water to cover up to 2 inches. Add in the onion and continue to simmer covered for 2 hours until everything is tender.
3. Heat the oil in a pan and start to saute the garlic, then add the beef and celery. Cook until lightly browned. Add chili powder, paprika and thyme as well as the tomatoes. Cover and simmer for additional hour.
4. When the beans are tender, add to the meat and stir slowly. Add salt and pepper. We added sour cream as a garnish.
