Easy As Pie Cookies



Hello Y’all!

Charity is very important to me and I love to be able to give back to others as much as I can. I made this recipe for a sweet cause: Cookies for Kids’ Cancer. My dear friend Julie from The Little Kitchen launched this First Annual Good Cookies Food Bloggers’ Valentine’s Event and we are joining her because we want to make a difference in the fight against pediatric cancer. In years past, we fellow food bloggers got together to mail cookies to each other for this amazing cause.

Did you know that cancer is the #1 cause of death of children by disease in the U.S.? There are 40,000 U.S. children actively battling cancer right now. With less than 4% of the National Cancer Institute’s budget going to all childhood cancer combined, I knew it was important for me to get involved.

Help us make a difference by donating to Cookies for Kids’ Cancer! Our goal is to raise at least $3000. Because these three companies: Dixie Crystals, Land O’Lakes and Mediavine have each pledged to match our donations raised through this campaign up to $3000!!!

These easy as pie cookies are just that! Easy! What a fun treat to make for your favorite Valentine or as a little something sweet to bring to a friend. I used my Aunt Judy’s Blueberry Jam that she made over the summer back in Kentucky. You can use any type of fruit jam or filling that you love. With the savory pie crust and the luscious syrup from the blueberries it marries together for a flaky, gooey concoction that is sure to be blissful. Hope you will enjoy my hybrid dessert of mixing cookies and pie into one. Happy Eating!

Easy As Pie Cookies

Prep Time: 10 minutes

Cook Time: 20 minutes

Easy As Pie Cookies


  • 1 package of pie crust dough
  • 1 jar/can blueberry jam or pie filling


  1. Preheat oven to 350 degrees.
  2. Line your cookie sheet with parchment paper, set aside.
  3. Carefully roll out pie crust evenly.
  4. Using a round cookie cutter or a knife cut the dough into circles. I sometimes will use a small juice glass to help stamp out the circles.
  5. On half of the circles, use a heart-shaped cookie cutter to stamp out small hearts. If you are good with a knife, you can hand carve them as well.
  6. Transfer the plain circles of dough to the cookie sheet and top with 1-2 spoonfuls of jam/fillings. I did about a tablespoon for each of mine.
  7. Cover the tops with the hearts dough.
  8. Press around the sides to completely seal the edges.
  9. Bake in the oven for 20 minutes or until golden brown.
